We recommend macerating the strawberries (cutting off the tops, cutting them in half, and putting them in a bowl with some sugar and allowing to sit for an hour or more - this helps bring out the sweetness and juice in the strawberries) and then add either whipped cream or lemon curd for a delicious summer treat.  This recipe serves six.&lt;br /&gt;&lt;br /&gt;Ingredients: &lt;br /&gt;1 1/2 cups all-purpose flour&lt;br /&gt;2 Tablespoons sugar&lt;br /&gt;2 teaspoons baking powder&lt;br /&gt;1/4 teaspoon cream of tartar&lt;br /&gt;1/2 cup butter&lt;br /&gt;1/3 cup heavy cream&lt;br /&gt;1/2 egg, beaten (the easiest way to accomplish this is to beat an egg in a seperate bowl and then use approximately half of it)&lt;br /&gt;little bit of milk (for brushing top of shortcakes)&lt;br /&gt;little bit of sugar (for sprinkling on top of shortcakes)&lt;br /&gt;strawberries, whipped cream, lemon curd, other topping&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;1. Preheat oven to 350degrees F (175degrees C)&lt;br /&gt;2. Mix the flour, sugar, baking powder, and cream of tartar into a bowl.  Cut in the butter with either a pastry cutter, two knives, or your hands (you do not want the butter creamed - just cut it so that there are small pieces of it throughout the dough as this will make the shortcake flaky).&lt;br /&gt;3. Mix in cream and egg and stir until well combined.&lt;br /&gt;4. Remove dough from bowl onto a smooth, floured surface and knead for several minutes.&lt;br /&gt;5. Press dough down to 1/2 inch height and cut out shortcakes.  We prefer to use  large round fluted cookie cutters for a classic shortcake shape.&lt;br /&gt;6. Place shortcakes on baking sheet, brush top lightly with milk and add a sprinkling of sugar.  Bake for approximately 20 minutes or until golden.&lt;br /&gt;7. It's typically during this time of year that everyone starts craving warmer weather.  While it won't help you with your tan, Lemon Curd is a delicious and versitile way to taste yourself to warmth.  This curd is fantastic simply eaten on toast or it can be mixed with whipped cream for a light and refreshing cupcake frosting. Our favorite use for it though is to pour the curd into a pre-baked tart shell and refridgerate it until the curd has fully hardened for a lemon tart you won't soon forget.  (Top the tart with strawberries and it'll be a lemon tart no one will soon forget!)&lt;br /&gt;&lt;br /&gt;Lemon Curd&lt;br /&gt;4 lemons, zest and juice&lt;br /&gt;8 oz unsalted butter cut into pieces&lt;br /&gt;12 oz sugar&lt;br /&gt;4 eggs&lt;br /&gt;&lt;br /&gt;When zesting lemns be sure to only take the zest and not the pilph (the white stuff).  Take the lemon juice, lemon zest, and butter and place in a non-aluminum pot, as the lemon juice will react poorly to aluminum.  Placce pot on heat until it begins to boil, be sure to stir with a whisk while heating.&lt;br /&gt;&lt;br /&gt;While the juce and butter is heating, combine the eggs and sugar and whisk well.&lt;br /&gt;&lt;br /&gt;Once the lemon liquid mix reaches a boil add it slowly to the sugar mixture, whisking constantly.  Slowly is the key word so as not to literally acramble the eggs.  Once all the lemon mixture has been added to the eggs place everything back in the pot and h eat until it thickens. Our pastry chef shared this human recipe with us and says it's perfect when you're craving some warm comfort food but don't have the time or energy to make an entire coffee cake from scratch.  Best of all, she promises that no one will know you cheated!&lt;/em&gt;&lt;br /&gt;&lt;br /&gt;Ingredients: &lt;br /&gt;1 box yellow cake mix&lt;br /&gt;1 small box instant vanilla pudding&lt;br /&gt;1 small box instant butterscotch pudding&lt;br /&gt;4 eggs&lt;br /&gt;1 cup water&lt;br /&gt;1/2 cup oil&lt;br /&gt;1 tsp vanilla&lt;br /&gt;1 cup light brown sugar&lt;br /&gt;1 tsp cinnamon&lt;br /&gt;&lt;br /&gt;Baking Instructions:&lt;br /&gt;1. Preheat oven to 375degrees F.&lt;br /&gt;2. Combine cake mix and puddings and mix until all lumps are broken up.  Add in eggs, water, oil, and vanilla, and mix until well blended.&lt;br /&gt;3. In a seperate bowl, mix together brown sugar and cinnamon and set aside.  This will act as the cake topping.&lt;br /&gt;4. Grease a large bundt pan or other large baking pan and sprinkle with half the cinnamon sugar mixture.&lt;br /&gt;5. Pour in half of the cake mixture.  Sprinkle the remaining cake topping over the dough and then pour the rest of the cake mixure on top.&lt;br /&gt;6. Bake 20-30minutes and then reduce oven temperature to 325degrees F and bake for another 30 minutes (may require change in time due to pan shapes and sizes).  Coffee cake is ready when a toothpick inserted into the center comes out clean.&lt;br /&gt;7. Remove from oven and allow to cool for 5 minutes.  Then invert onto a wire rack and allow to finish cooling upside down.  Cake should release from pan while cooling.&lt;br /&gt;8. Coffee cake can be kept covered for up to three days. The ingredients are all sourced from small businesses and small family-owned farms.  What's more, the packaging is 100% eco-friendly what with the inner bag being compostable, the outer box being recycleable, and the label being made from Fiberstone which is a tree-free paper alternative.  For anyone looking for a true eco treat this is a great option!&lt;br /&gt;&lt;br&gt;&lt;br /&gt;&lt;em&gt;Hanukkah Coins:&lt;/em&gt; The idea for this treat really has to go to our chef's mother-in-law who last year complained that the vast majority of holiday dog toys and treats were geared towards Christmas.  'What about Hanukkah?' she asked.  We realized she was right so we spent a good amount of time this past year developing our Hanukkah Coins to resemble human gelt.  Made from dog-safe carob, this wheat-free treat is also packaged in eco-friendly packaging (the bag is compostable, the gold foil covering every coin is recycleable, and the attached card is made from recycled paper and printed with soy-based inks). Cooler winds, shorter days, delicious Fall produce, the start of school, and, inevitably, the beginning of the Fall tradeshow season.  This year we're heading to SuperZoo (Sept 15-17 Booth #1863) and HH Backer Christmas (Oct 2-4 Booth #4134) and can't wait to show our products to retailers.  In the coming days I'll do a little writeup on the two new products we have this year.  Not only are the new products creative and delicious, but they are also eco-friendly!&lt;br /&gt;&lt;br /&gt;Today may have been Labor Day but with SuperZoo starting in about a week, a good portion of today was spent getting our pallet ready to ship off to the shows.  It's always exciting to get that on it's way as it means that Tradeshow Season has begun!&lt;br /&gt;&lt;br /&gt;Since I anticipate the rest of this week will be pretty quiet in advance of the show, now is the time to spend some time and energy thinking of what food we'll be bringing with us to the show.  Tradeshows are always fun and a great chance for us to meet and catch up with new and repeat retailers as well as share stories with our favorite manufacturers.  But the days are also really long so we like to bring a few human treats with us to help us get through the days.  &lt;br /&gt;&lt;br /&gt;In addition to our perennial tradeshow favorites of Gary Poppins White Cheddar popcorn (www.garypoppins.com - handmade popcorn that is just better then you've ever tasted before!  This provides us with a 'salty' fix when needed) and Chukar Cherries (www.chukarcherries.com - chocolate covered cherries from our home state of Washington.  I like to think that not only do they give us a 'chocolate' fix when the 3pm slumbers hit, but since they're made from cherries then they also qualify as 'fruit,' don't they?), this year I've been playing around with pretzel bread.   True to form, I first tasted it at a local bakery and became hooked.  So in my free time I've been experimenting with recipes and have finally found one that tastes just like the bakery.  So this week I'll be baking up a bit of that as well to bring to SuperZoo as well.   Though for anyone who is looking for a truly delicious bread at SuperZoo without the hassle of making it themselves I highly recommend stopping by Red, White, &amp; Blue in Mandalay for their morning croissant. In case you haven't heard, the North Shore Animal League has a grassroots movement to make the first of August 'the' day to celebrate birthdays of shelter dogs and cats everywhere.  As many of us with rescue pets know, our pet's true birthday is something we most likely don't have.  DOGust 1st is the answer! Similar to a sorbet in that it relies on fresh fruit for flavor, granitas have a grainier, ice-crystal, texture.  Best of all, you don't need an ice cream machine to make these!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;4 cups cubed, seedless watermelon&lt;br /&gt;1/2 cup sugar&lt;br /&gt;lemon juice from one lemon&lt;br /&gt;rind from 1/2 of one lemon&lt;br /&gt;&lt;br /&gt;Instructions:&lt;br /&gt;1. Combine all ingredients in a blender or food processor and puree until smooth.&lt;br /&gt;2. Pour mixture into a large shallow pan and freeze for one hour.&lt;br /&gt;3. After one hour, remove from freezer and rake a fork through the mixture to break up the ice crystals.  Think 'sno cone' texture.&lt;br /&gt;4. Replace pan back into freezer and freeze for another hour.  After which, remove from freezer and rake with a fork.&lt;br /&gt;5. Return pan to freezer and freeze for another hour or until ready to serve. One of the key parts to any product - new and old - is quality ingredients which is something we take very seriously.  We have always strived to put only the highest-quality US-sourced ingredients in our treats and won't settle for anything less.  However now we're hoping to raise the bar even further.  &lt;br /&gt;&lt;br /&gt;We've spent the last several months talking to local farmers to try and find the best possible organic ingredients from small family-owned farms.  And I'm happy to say after several months of searching, we just signed on the dotted line this week!  The family farm we'll be working with is Oregon-based and has been in business for nearly a century.  They started as a honey farm and quickly grew to become a provider or raw ingredients to businesses around the Pacific Northwest.  Not only do their ingredients taste wonderful, but they also have a comprehensive safety program to ensure that their ingredients are never tainted (and in the nearly 100 years of business they have never had to issue an ingredient recall). Part shepard?  Part collie?  Perhaps part wolf?  We never did find out but he was beautiful and unique in his own way.  Rescued as a puppy, Nesta came into our home and - as with any dog - made us realize that we could never imagine our life without him.   True to his namesake (Nesta is Bob Marley's middle name), Nesta was laidback and ever so cool.  While other dogs wanted to run around and bark to kingdom come, Nesta was never more content then when sleeping at the feet of his people.  &lt;br /&gt;&lt;br /&gt;In losing him it's like we're losing a bit of ourselves.  This fur-person has been a part of our graduations, marriages, joys, and loses. Goes great with yogurt or toss in some chocolate pieces to make a yummy and satisfying mid-afternoon snack.&lt;br /&gt;&lt;br /&gt;4 cups rolled oats&lt;br /&gt;3/4 cup brown sugar&lt;br /&gt;3/4 cup wheat germ&lt;br /&gt;1/2 cup flaxseed&lt;br /&gt;5 oz shredded coconut&lt;br /&gt;1/4 cup + 1/8 cup vegetable oil&lt;br /&gt;1/4 cup + 1/8 cup honey&lt;br /&gt;1 tsp vanilla extract&lt;br /&gt;&lt;br /&gt;Preheat oven to 325F degrees.  Mis all dry ingredients together.  Add oil, honey, and vanilla extract and mix well to try and coat dry ingredients.  Place mix into a lightly buttered 9X13inch baking dish and spread the mix out so that it creates a shallow layer. As most dog owners know, these chocolate goodies aren't safe for dogs but many treats, including some of Petit Four Legs', offer up carob as an alternative.  So what exactly is carob and why is it safe for dogs?&lt;br /&gt;&lt;br /&gt;Like chocolate, carob grows on trees and it is the seed pod which is edible.  Native to the Mediterranean, carob has an illustrious history.  It was eaten in Ancient Egypt and is mentioned in both the Talmud and the New Testament.   Today it is most commonly used as a sweetner or chocolate substitute.  Carob is also believed by many to boost nutition and actually be healthier for humans than chocolate but no scientific studies have confirmed this yet.&lt;br /&gt;&lt;br /&gt;For dogs, the reason that carob in moderation is a safe alternative is that carob does not contain theobromine, an alkaloid found naturally in chocolate.   Theobromine, in amounts as small as 50g for small dogs, can cause tremors, dehydration, and even seizures and death. Why a human recipe in a dog treat newsletter? Since our company was started by a professional pastry chef we constantly have sweet human treats in the office. Most Monday's our head chef comes into the office with something she baked up for the staff. In addition to having fantastic coffee they also have delicious treats that are all made onsite. One of these treats - a chocolate truffle cookie - has become a staff favorite but at $2.50/cookie, it can start to add up over time (we can sometimes spend a lot of time at this coffee shop!). So our head chef got it in her mind that she was going to figure out the recipe. And, low and behold, after several weeks of experimenting at home, she did!&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Chocolate Truffle Cookie Recipe: (approx 36 cookies)&lt;/em&gt; &lt;br /&gt;4 oz unsweetened chocolate&lt;br /&gt;1 cup semisweet chocolate chips&lt;br /&gt;6 Tbl unsalted butter&lt;br /&gt;3 eggs&lt;br /&gt;1 cup granulated sugar&lt;br /&gt;1 1/2 tsp vanilla extract&lt;br /&gt;1/2 cup all-purpose flour&lt;br /&gt;2 TBL unsweetened cocoa powder&lt;br /&gt;1/4 tsp baking powder&lt;br /&gt;1/4 tsp salt&lt;br /&gt;1 cup semisweet chocolate chips&lt;br /&gt;&lt;br /&gt;1. In a microwave or a bowl placed over a pan of simmering water, melt unsweetened chocolate, 1 cup chocolate chips, and butter until smooth.  Remove from heat and set aside to cool.   In a large bowl, whip eggs and sugar for about two minutes until thick and pale.  Stir in vanilla and chocolate mixgture until well mixed.  In a seperate bowl, combine flour, cocoa, baking powder, and salt; gradually stir into the chocolate mix.  Fold in remaining 1 cup chocolate chips.  Cover dough and chill for one hour.&lt;br /&gt;2. After dough has chilled, remove from fridge and, using a medium-zied ice cream scoop, scoop out dough balls.   Place dough balls on a baking tray covered with wa or parchment paper.  Place baking sheet and dough balls into the freezer for one hour.  &lt;br /&gt;3. If cookies are to be eaten immediately, preheat over to 350 degreesF (175 degreesC), place on ungreased baking sheet, and bake 15-22 minutes.  Allow cookies to cool 5 minutes on baking sheet before eating.&lt;br /&gt;4. Alternatively, cookies can be stored frozen and baked a little at a time as needed.  In this case, remove dough balls from the baking sheet in the freezer and store in a plastic zip-lock bag. Even those of us who usually try to watch what we eat typically allow ourselves a little something special or an extra helping of Aunt Sue's famous family recipe.  And while we may let our diet slip a little bit it's important to keep our dogs' diets in check during the holidays.   &lt;br /&gt;&lt;br /&gt;While we certainly advocate the giving of healthy treats (in controlled amounts), it's important not to change up a dog's diet too much.   Drastic changes in diet, whether it's changing to a new food or slipping Buddy something from the table, can wreck havoc on a dog's delicate stomach.  So while they may look up at you with adoring eyes that simply beg to have a piece of the spiral-cut ham, it's best to keep their diet as normal as possible.  Also keep in mind that dogs can be master thieves when it comes to food so keep any toxic treats - mainly chocolate! - out of dogs' reach.&lt;br /&gt;&lt;br /&gt;If you have any questions about what to feed/not feed your dog it's best to ask your veterinarian. Partly because we celebrate both Hannauka and Christmas - that means there's a lot of celebrating in the month of December. The secret is that we don't buy them.   &lt;br /&gt;&lt;br /&gt;Each of those bones, and the pink bones included in our year-round pink and brown Cupcake Mix boxes, is made by hand from dog-safe yogurt.   For the seasonal variety, we first make the bones and then after they are dry we go back and paint them with FDA-approved food color to achieve the festive candy-cane strip effect.   When you figure that each kit contains 18 bones it starts to add up quickly!   It is a lot of work and we'd be lying if we said there weren't days that the thought of making more bones didn't drive us near crazy. While the article mentioned that she has an MBA, they forgot to mention that she was also a professional pastry chef (her career before going back to get her MBA).   It was while at Business School that she decided she wasn't cut out to be a cubicle rat and wanted to come up with something that would combine her love of dogs with her love of working in commercial kitchens. As anyone who has/loves pets knows, our animals are a large part of our family and the idea of having to give them up is to a shelter (not always a no-kill shelter) is heartbreaking. &lt;br /&gt;&lt;br /&gt;I'd love to encourage those of you out there who can afford it to think about making a donation (either monetary or product donation) to your local food banks to help provide pet food to our neighbors in need. Not only will this help keep those pets in their loving families but it will also help keep animals out of our already overcrowded shelters. At the very least, think of the karma points... &lt;br /&gt;&lt;br /&gt;How to help: &lt;br /&gt;1. Quick google search to find your local food bank and determine if they take pet food &lt;br /&gt;2. Either make a monetary donation (can often be easily done online) &lt;br /&gt;or &lt;br /&gt;3. Next time you're picking up pet food for your own animal consider picking up an extra bag or two to donate. You can often drop these donations off in person or many food banks have drop off stations at local supermarkets so you won't necessarily even have to go out of your way &lt;br /&gt;4. Go home and cuddle with your pet &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;For what it's worth, Petit Four Legs is working with one of the local animal shelters to try and help raise awareness and increase donations to food banks through a variety of means.   On a more personal level, my family is providing a supply of pet food to our local food bank and are trying to encourage our friends and neighbors to do the same. Around dinner that evening we had the pleasure of meeting two proud "parents" of a Homeward Pet rescue pup. This couple had adopted Larry from the shelter about a year and a half ago when he was only 8 weeks old. We have a lot of dogs in the office and it sometimes seems as though at least one of us is out taking one or more of the pups for a walk. Today was all about making human food!   A friend of ours who runs a small cupcake company was swamped with orders and needed some help so we chipped in to help her out.   &lt;br /&gt;&lt;br /&gt;The great thing about our commercial kitchen space is that not only do we meet USDA requirements but also human health code specifications.  That combined with the fact that Petit Four Legs staff all have their King County Food Protection Permit (required by State of Washington for anyone working with human food) means we can help out with human food items as needed.&lt;br /&gt;&lt;br /&gt;Even though it's not required by law, I run Petit Four Legs like the pastry studios I've worked at in the past.   This is why every employee is required to meet the rigerous standards required for human food. Interestingly enough, right now we're working on a new product that would be private labeled.   I'm not going to say too much until all the i's are dotted and t's crossed but it's an exciting new market and new product that I think could have a lot of traction in its region.
